The restaurant industry comprises one-tenth of the American economy and is the largest consumer of electricity in the retail business sector. With rising costs of energy and increased concern about the environment, there is a need to integrate intelligent environmental policy in every restaurant, big and small. That policy is paying off for many restaurants around the country, who have chosen to become Certified Green Restaurants. One of America¹s top ten grossing restaurant units became a Certified Green Restaurant in 2002 and has already saved thousands of dollars and received exposure on various media including NPR¹s San Diego affiliate. Another small chain came on board in January of 2003 and will save over $20,000 per year; in addition, they will be featured on Fox News and were featured recently on CNN¹s Headline News in San Diego¹s North County.
The (GRA) Green Restaurant Association, the national non-profit organization which helps restaurants become more environmentally responsible, recently unveiled the world¹s largest database of environmental solutions for the restaurant industry. The GRA helps restaurants go through a series of changes, including energy efficiency, waste reduction, using safer chemicals, and more. Such prominent restaurants, such as George¹s at the Cove, Croce¹s, Sammy¹s Woodfired Pizza, Café Cayote, and Coffee Bean and Tea Leaf Co., are a few examples of restaurants which have committed to accomplishing four environmental steps per year. The program is successful, because the GRA works with the various manufactures, utilities, distributors, recyclers, and more to ensure successful implementation.
